A great variety of cassava-based dishes are consumed in the regions where cassava (manioc, Manihot esculenta) is cultivated, and they include many national or ethnic specialities.
The grated cassava is rinsed and pressed through woven "bammy bags" (the runoff of which contains cyanide and is very toxic to humans and livestock) and fried into flat round "cakes". The sweet cassava root, M. esculenta subspecies flabellifolia, is boiled and used like potatoes in stews.
